Apple and Walnut Salad

I know that this might be a good fall salad but I mean, come on, this time of the year calls for salads in any presentation or with any kind of flavors.


The good thing about this salad is that its main ingredients aren’t properly for specific season and for sure you can find the ingredients at any time of the year.


Tips: Try to Avoid... When making a salad at home try to avoid store bought salad dressings, there are a lot of unnecessarily ingredients on there and of course the majority of them are filled with lots of sugar and salt and believe me, you don’t need any of that, because trust me that working with natural ingredients can give you even better results.

What’s in the salad?

The basic ingredients are apples, walnuts, honey (or maple syrup if vegan), vegan cream cheese, balsamic vinegar and a spring mix salad but you can easily change them for any kind of greens that you have at home, for example just baby spinach or baby arugula can work.


Try to keep things simple.


When making a salad always remember that less is more and you don’t have to use all ingredients on your fridge to make an awesome and nourishing salad, this doesn’t work here. Instead, try to trust your instinct and choose less than 10 ingredients.


RECIPE


Apple & Walnut Salad


Ingredients:

3 cups Spring mix salad

1 green apple thinly sliced

1 red apple thinly sliced

¼ chopped toasted walnuts

3 Tbsp. sour vegan cheese (or goat cheese if not vegan)

2 Tbsp.maple syrup (or raw honey if not vegan)

½ tsp. pink salt

½ tsp. ground black pepper

a pinch of ground nutmeg

2 Tbs. balsamic vinegar

1 Tbs. Apple cider vinegar

2 Tbs. Extra virgin olive oil


Directions:

In a large bowl arrange the spring mix, then sprinkle salt and pepper, add apple cider vinegar, balsamic vinegar and olive oil, give it a good stir but becareful to no over mix.

Arrange sliced apples, you can place them by color or just have fun and mix them all over the salad, then spoonthe sour vegan cheese, sprinkle toasted walnuts and nutmeg and finish by drizzling the honey.


You can serve with toasted bread.


 

Ensalada de Manzanas con Nueces de Castilla


Ingredientes:

3 Tazas de mix de lechuga sangría

1 manzana verde, finamente rebanada

1 manzana verde, finamente rebanada

¼ cup de nueces de castilla troceadas y picadas

3 Cdas de queso vegano agrio (o queso de cabra si no son veganos o intolerantes)

2 Cdas de miel de maple natural (o miel de abeja, si no son veganos)

½ cdita de sal rosa

½ cdita de pimienta negra molida

una pizca de nuez moscada fresca rallada

2 Cdas de vinagre balsámico

1 Cda de vinagre de manzana

2 Cdas de aceite de olivo extra virgen


Procedimiento


Coloca el mix de lechugas sobre un tazón para ensalada, agrega sal, pimienta, aceite de olivo, vinagre balsámico y vinagre de manzana y dale una buena mezclada, hazlo con cuidado para no desbaratar las lechugas.

Después agrega las manzanas rebanadas, estas puedes acomodarlas en montoncito por color o simplemente revolverlas todas junto con las lechugas, después agrega el queso, formando bolitas con la cuchara, por ultimo salpica la nuez de castilla y la nuez moscada sobre la ensalada y adereza con la miel, le dará un toque perfecto a tu ensalada.
